Anyone know how to stop focuswriter from opening the last file open, or know of a equivalent "minimalist" writing app?

Just guessing.

Open the dialog Manage Sessions (Ctrl+Shift+M), add a new session, and delete the existing one.

Or Settings > Preferences... > Daily Goal > uncheck Remember history.
