eog and nautilus meta tags


I'm going through a project to label all my 28,657 jpgs with a description.

Mainly so when I want to find a photo I have something to search on. I'm planning on using the following exif tags.

Exif.Image.DocumentName
Exif.Image.ImageDescription
Exif.Photo.UserComment


I noticed in nautilus when you right click on a image it displays some of the exif tags in the image tab. Is there a place I can see what tags are displayed here? Or is there a way to specify new tags?

In the image viewer (Eye of Gnome) under metadata table there is a Description, Location, Author, Keywords, and Copyright labels. Which tags control these fields?
