CC field in Evolution

I am trying to figure out how to add a CC field to my emails that I am composing. I obviously have the To field there and would like the CC and maybe a BCC field.

I have looked under Tools -->Settings and did not find anything there.

Can someone please help me out.

Also I have a signature that I have created. When I go to write a new email it still shows the default signiture of "none" How do I make the newly created signature the default?

When the compose window is open click on view, you will see the CC option.

Signature....
Tools->Settings->Mail Accounts
Select the account you want to edit and click "Edit" at the bottom of the window click on
Add New Signature...

New window pops up...
Type in a name for the signature....
Type the signature
Save the signature....
Now select the signature from the drop down.
