????Mail server? - try qmail or sendmail. All the mx record does in a dns zone file is point to a host(fully qualified name) with a server to accept incoming mail connections.

Okay then sendmail or qmail should do the trick. There's tons of info on both of them. I'm told that qmail is the more secure of these two and easier to configure but I'm having some problems to configure it myself so I can't give you much more info about it. You can download it at www.qmail.org. Just make sure you have a working dns for qmail

Try www.sendmail.org They should have a basic configuration walk-through to help set it up. Or if you want to do it the lazy way you could try using webmin (www.webmin.com). All you need for it is a web-browser. But perhaps for actual learning experience it's better you do it by hand.
