1) Please explain what you want in a little more detail. Are you talking about some kind of "egg timer" program? What do you want it to do exactly?
2) Please post some details about your system; specifically, what distribution are you running? Set it up in your profile so that it's always available. It's hard to give advice when we don't know what's available to you.
3) For "what software..." type questions, the first thing you should do is always search through the available programs in your distribution's software repositories. If that fails to turn up anything, try google next.
do you know any open software to alert me i have to "Turn off the oven"?
If it works also on windows, that would be perfect!

That's like asking "how high is up"...it's very vague, and you don't say what you're working with.
Do you mean open-source X10 like software, to control home automation modules? Do you have custom sensors? Alert you how (email? SMS? What?), on what version/distro of Linux?
