I have been using the partimage utility for making an image of a partition that doesn't include the free space. It can be installed as a stand alone package. It will only back up an unmounted partition.

I've tested it quite a bit and it works great.
If you just want a daily backup it's hard to beat the tar utility.

When you are imaging a system you can't have the system up and running.
Replace "can't" with "shouldn't".
In the Windows world, some imaging apps try to do exactly this. Which to me, always seemed like an incredibly stupid thing to do. I don't care what the app developers tell you or how many tethers they attempt to attach, it's just plain silly to go outside and try to scrape the bugs off an airplane's windshield WHILE you're flying it. Live imaging is a prime example of convenience trumping robustness and security.
