Running Ubuntu 16.04 LTS and seeking an alternative to Thunderbird. Would want a program where I have the option to keep the emails I have read on the server or delete then once the email has been downloaded.
I downloaded and installed Evolution last week but it does not give me this option.

not to sound rude, but a google search for 'linux email client' turns up dozens of results, there are really far, far too many to list, i would do a search, look at the features of a few popular programs, and pick the one that bests suits your needs..

I take it you are using IMAP and not POP3 and have set things up on the email host also?
IMAP implemntations do seem different depending upon service provider so that may be a cause of issues?

While I'm not sure if these offer IMAP support, you can find a list of additional clients here. I would imagine most, if not all, of them are available in the repositories.
