äöå in Ximian Evolution

I'm using Gnome and Ximian Evolution as my mail program. It is able to display "äåö"-letters correctly, but when I send e-mail it changes them to look weird letters:
À = ä
ö = ö
Ã¥ = å

What is wrong?

I don't use Evolution but look for a setting where you can specify what character set to use. You should probably use iso8859-1 (latin1) or 8859-15 (latin1 with Euro characters support) instead of whatever you're using now (UTF-8 or UTF-16?).

Also check your environment variables. To use Swedish characters but have all programs use English I have set LC_CTYPE=sv_SE, LANG=en_US and LANGUAGE=en_US.

You can set (export) environment variables in /etc/profile, but all distributions have their own way of doing this kind of things.
