Cool What is the best Linux Os for an IBM Xseries 366.

I will be using the server as a multi tenant asterisk machine. I am new to linux but I'm a quick learner.

I am thinking Suse or RHEL would be your best bet. Now let me ask, what do YOU want to run on it? Overall, it is up to you in what you want to do with it.
