Two Apaches vs One

I had two apache instances running concurrently one for http and another for https. It seemed to work fine.

What is common practice, one apache for both http and https or two as I did?

Apache is multi process software. By default one instance can handle for both http and https without special config.
If you decided to go with two separate instances, you need to maintain both instances. Like apache package upgrade.
My recommendation is if you don't have valid reason, for simpilicity keep it with one instance.
