ps aux and top

please anyone can explain me why "top" and ps aux for a process
shows different values ?

For example I have a daemon

When I execute this
ps aux | grep
root 3651 0.3 3.0

Almost all day it shows above values for cpu and ram.

If I execute top and I monitor cpu usage
I can see really different values (bigger!)

Any idea why ?
