Ownership Changes to 501
 
Mounting via NFS to a server that has attached storage (SAN) in this situation and ownership is set to a particular user on both servers. john:john

After mounting the ownership changes to 501. Can someone explain what is happening and how I can correct this so when I mount my ownership remains john:john

Change john's UID to 501 on the client.
Not sure from your post, but it sounds like on the server, john's UID is 501, but on the client doing the NFS mount, it is not. A user's UID must match on both client and server for best results.
