No, it does not matter, in networking the file system on the server is independent of the client.

OK, perhaps we should start at the beginning, which is selecting a Linux that I will burn on a CD, that will format the HDDs to be used with my server.

Apparently Ubuntu or Mint might be two popular choices, right?

Correct. All of the distributions suggested will work fine for sharing files.
Ubuntu, Mint, CentOS.
