I've used both Debian 7 and Ubuntu Server 12.04 LTS.
I noticed that Ubuntu has a lot more updates than Debian. Debian usually only updates for bugfixes and security patches where Ubuntu seems to actually update to a newer version. The Debian way is more stable, but the Ubuntu way is closer tho the latest version.
Other than that, I don't recall anything about Ubuntu that was significantly different than my Debian now.
Some people don't like Ubuntu's method of rolling out a new release every 6 months, since that means a deadline and things might get rushed in the last few weeks. Debian only hands out a new release once they've spent 2-3 years making sure that it's stable and doesn't have any major flaws.
