I am having so much fun learning new things but....
I see lots of posts on how to set squid as a proxy. But I need to know how to use it as a mail proxy server.
Can someone assist me.

No, mainly because you can't. Squid is an HTTP proxy, not a mail proxy.

Hello and Welcome to LinuxQuestions,
If I'm not mistaking Squid only handles HTTP, HTTPS, FTP and a few other protocols more but not mail/pop/imap. If you want to set up a mail proxy then have a look at Nginx amongst others.

Hi,
Like TB0ne pointed out, Google is the magical friend. And why would you say it doesn't work for CentOS? Just because it's not in the base repos doesn't mean you cannot use it on CentOS. Have a look at this page with instructions how to install on your OS. And remember, a quick search in Google can save you a lot of time.
