It really depends heavily on what you're going to need the mail server to do and how you want to go about doing it. There are legitimate reasons for choosing every mail transport agent out there.
I agree with the other poster that
http://www.debian-administration.org/ is a good resource to start with and I would additionally add that
http://www.howtoforge.com/ also has many good tutorials for a wide variety of operating systems and setups.
It's important to be sure that you're not an open relay, but sure to use one of the various relaying check systems to ensure that you're not allowing spammers to abuse your system.
Another common hurdle sometimes missed by people is DNS, be sure to point your domain's MX records to the machine once you're ready to have it receive mail.
