Customization is easy when we install the OS and we don't know what packages is existing on your system and what you need and no need so it's up to you, Please refer the following site for package manager

I want to do the same thing. I have a server with WAY too much stuff installed on it. No need for anything graphical. How do I get rid of all the GUI stuff?

You can search the installed groups by

Code:
yum grouplist
And then remove groups "GNOME Desktop Environment" , "X Window System" , "GNOME Software Development" , "X Software Development", "KDE Software Development" , "KDE"

Code:
yum groupremove "GNOME Desktop Environment"
...

And you can remove all packages which you think it's unnecessary.

Best Regards
