The main difference between VMware Server and Workstation is that...

Server (formerly known as GSX Server) is now free to use.
Workstation needs a license or it stops working (to a degree) after 30 days.

Server can only be installed (although this may now have changed) on machines with either SCSI or SATA hard disk drives.

The other main difference is in what virtual hardware resources you can allocate to a VM... e.g. limits on numbers of CPUs, memory, NICs etc

The biggest difference I noticed (apart from the fact that Server is free and Workstation isn't) is that with Server, you cannot assign "shared folders" on the host machine for the guest to access. You CAN still map network shares in the guest, however, so that's not a huge deal.
