What do you mean default username and password for the IMAP server? It only authenticates the users that you setup. If you haven't created any users yet, there's no one to log in...

What username and password? You have to create accounts to use e-mail. If you haven't created any accounts, there isn't any username or password. Use the useradd command to create a new user, or whatever method Red Hat has for creating users through their UI.

Any accounts you create that work for IMAP should work for Squirrelmail. I'm fairly certain that it uses IMAP for it's back-end.

As for the domain, you would have to change that in /etc/hosts and specify a host and domain name for your IP address. If you want people from outside to be able to send you e-mail, you would have to buy a domain name and make sure the MX record points to your public IP. On your firewall you would need to forward port 25/tcp to your server. You would also need to run an MTA on your server, such as Postfix, Sendmail, Exim, etc so that you could receive e-mail. Dovecot and Cyrus only allow you to view e-mails that you have in your mailbox. In order for e-mail from the outside to get to your mailbox, you need an MTA.
