Create new mail folders and mail rules

Hi, I use Postfix and Dovecot for my mailing, and routinely get mail bounce backs. Rather than setting up Dovecot to route the bounce backs mail to a Junk folder, can I just do this from within my own account when I login via Putty? If yes, how can I do that?

I tried digging this online and found the "mail" command has an "folders" command listing out the folders. But not sure how these folders are created initially, and how I can additionally create rules to route mails to folders.
