I want to do project in class that has network security setup and masquerading in command mode and network security monitoring and masquerading in GUI mode.

you can use netfiler/iptables: http://www.netfilter.org/

for GUI mode try firestarter: http://www.fs-security.com/

another thing you could look at is snort: http://www.snort.org/
