/var/log/syslog, if you use syslog-ng. For packet level logging, you need to enable the firewall and monitor /var/log/firewall. Logging every packet is not standard for any OS and would fill up your hard drive in a day. For access to processes over the network, check the logs for those processes. If you just want to see what IP's you are hitting, use a firewall and/or an intrusion detection program. All of which are free.
