Logging Packets

Hi i've just started using redhat9 for a server not long ago and once a while I get dossed and the whole server timeouts for quite some time.

What i would like to know is that how can i log the ips that are packeting me.

You should look at snort. It is a nice intrusion detection software.
You might want to setup acid too. It is a web fronted to look at the snort logs.
