Hi,
If you want mess with iptables to fine tune network security,you should consider try shorewall firewall(http://www.shorewall.net).
But of course if you want to really mess with iptables you should try the iptables homepage(http://www.iptables.org)and browse to documentation to the howtos which is the best documentation for the iptables available.....

You should also check out the tutorial at FrozenTux . It's a meaty document, but everything you need to know is in there.
