The system needs root to operate, so you can't disable (i.e. remove) him completely. You can set it to a horribly difficult password and forget what it is though. Something like P,},<&EVZ=oBqB[7!. should do nicely (don't actually use this obviously, it's just an example).
EDIT: the post below more correctly answers your question. I saw "su" but read "sudo" which would be the better way to do this as you can control the what commands users can run with elevated rights.
