You want another computer attached to the network between these machines and use tcpdump to examine the network traffic. Use test traffic that would otherwise be plaintext (e.g. chargen).
How is your network laid out? You might need to restructure it so you can attach another computer in between, then route your traffic to that computer. Sniff traffic on that computer, and you should not be able to ready the traffic.
