Encryption doesn't protect your data from theft, it only stops it from being read/accessed in the event of theft!

If you ensure the initial password is complex enough and use a good algorithm to do the encryption then, it would make it very difficult for the would be thief to crack the encryption.

If by hijacked you mean physically stolen, then yes - generally speaking. There are caveats, as with anything. For example, you need to make sure you use a proven encryption algorithm with a decent key, and you need to make sure whoever stole your encrypted data doesn't ever get their hands on said key. The Wikipedia page for encryption has a good overview of what it is and how it works. Keep in mind that encryption isn't a silver bullet, it needs to be coupled with sane security policies and procedures.

What about smb shares, If a windows user connects via smb and wants to use the data will it be encrypted to them where they cant use it or, will they not notice the encryption ?
