Basic Server Security Assessment

I am conducting a assessment on linux for security server, first time am using it.

I have few server and would be gratefull to have a few questions answered.

Servers:
DNS bind

HHTP apache2

SMTP sendmail

IMAP Courier

FTP vsftpd

Secure Shell openssh

Database mysql

Apache James (sending)

xMail (receiving)

NASLite-FTP

Voiceover Internet protocol (VoIP SIP)

These are the servers am assessing, I am quite new to this. What are the default Port No, the discription of these server and the justification?

Thanks

Standard protocols are, by definition, operating system independent. HTTP runs on port 80 regardless of the server. FTP is FTP etc, nothing to do with linux.
