One thing you can do is still upgrade to Windows 10... though the free upgrade offer ended in 2016, it seems you can still upgrade 7 and 8.1 to 10 and retain a valid Mickeyshaft licence, using the standard means of downloading installation media.
There is some theorising there that MS' deal with the OEMs was what caused them to keep this quiet - in order not to hurt new PC sales. The main difference is that while before the upgrade was being pushed via Windows update back then, now it's not.
Not a windows fan at all but I will say that of all the versions since 1993, windows 7 was the best. Windows 10 is a huge step backwards in useability and performance, in my opinion.
Someone already figured out how to access the enterprise update that companies are paying for.
Where I work we still use maybe a million windows 7 systems and if the Windows 95 was any clue we will continue to run them for some time. I did a uname -a on a Fedora box that we depend on and it was 1.
Move into some sleepy rural village, of course.
That's the solution to most problems in life, really.

I'm the decaf version of human meat, the only flavor I have is salty, and if you're young enough to travel to me from the city by foot, then you're too poor to afford proper food anyway, no 'whole foods' for your budget because of many mistakes made before you, so you won't crave my flesh either.
Anyway, do the same thing as before, nothing. Nothing can make Windows good, it's a vehicle for 3rd party software so you can actually use your computer past notepad, IE (there's something to be said about "iie" being the word for NO in Japanese) and windows media player, not the good mplayer classic, no, the ugly one with the 'fancy skin'.
What's one more pebble in the shoe of Windows users who don't switch? Nothing. Nothing at all, either they're super low level and ONLY want games and don't care about branching out, or they're super high level with "apps I need at work".
They are unfortunate and must bear that weight.
You can't do anything except perhaps petition MS somehow to continue support, but this is probably the end even after some lobbying from some actual hefty entities, possibly.
Use Linux...if you can.
And really do move into a rural village, unless you don't want to because the city is best, then don't.
(Btw, it's just a friendly suggestion, I'm sure you have your horror stories about villages, too. How boring and backwards and awful the people are, etc. It's fair enough.
Some research suggests, though,, that living in a more sleepy environment makes attaining happiness easier, I agree, but I have never lived in a city so I'm ABSOLUTELY BIASED.)

Opinions certainly differ. For me Vista and 7 were turds and performance was abysmal. It improved with 8.1 and 10. With both you can install something like open-shell to get rid of the Windows 8/10 start screen "metro" menu. You can also, for the most part, still use the same configuration tools as Windows 7, by using keyboard shortcuts, running commands, etc - rather than the newer horrible powerpoint slide style UI elements (and open-shell gives you easy access to these anyway).
The biggest problem with 10 for me is the inclusion of spyware, adware and tracking/profiling software.

Has done so from day one though - with the only exceptions being Microsoft so-called "support"...
The Epic GWX Battle made me explode and after having worked with and seen how 'root' runs Win10, I had to call my Microsoft era for over... still we did have a good 30 year run, but...
You have several options. Option 1. Downgrade to Windows 10 which is Spyware/Malware. Option 2. Take your chances by keep on running Windows 7 and run a good security suite. Option 3. Switch to Linux. I recommend MX Linux. https://mxlinux.org/products/ Option 4. Dual boot Windows 7 and Linux. Option 5. Go with Apple if you have the money for it.
Android is not so different, in fact probably worse.
As with Android, Windows 10 has all the "opt out" privacy non features for you to trawl through and disable. Not logging into Windows with a Microsoft account (and instead using a local account) is also very important.

That's taking a lot of chances, as a "security suite", (endpoint security) will not continue to provide support for an OS which is EoL forever - and that's even assuming that endpoint security is a solution to security vulnerabilities in a Windows OS which is no longer receiving patches.

It's not just taking chances, it's a gamble.
Yes, it's actual both to the extreme. Running a security suite with Windows 7 is better than nothing. In my case I threw out Windows like an old shoe and went to full time Linux when I read the E.U.L.A. of Windows 10 back in September 2015.
I personally should shrug, I haven't used Win7 in almost 5 years. Heck, I BARELY remember how to use Windows. I forgot my laptop at home a couple weeks ago so had to use a Windows loaner and people asked me to do things and I had to sit there trying to think of HOW to accomplish that task on Windows.

I'll fight you on that, peak Windows was 2000 Pro, Win 7 was just an improvement over Vista , and yea better than XP at least, however prior to me moving completely over to Linux in the 00s, I was still using 2000 Pro until it reached EOL support.
I've been using various flavors of linux for 15 years, I've run every Win from Dos, win 3.11 for Work groups en masse and Win 10 with WSL (Windows Sub-system for Linux) is the best all around system I've ever used.
I have been using various Linux and BSDs for 20 years and Windows in any form is the absolute worst OS I have ever used. I have purposely changed my computing habits to rid myself of it once Windows 10 came out because I was so frustrated and disgusted.
"root" has always "run" Windows since at least the days of Windows 2000...
Yeah, but at least Windows 7 gives me complete control of when, who and why to connect to...
