How long did you wait? The fsck for an ext2 or ext3 filesystem can appear to pause for a few minutes if there are multi-gigabyte files there.

Do you see anything in the screen shot that would indicate a problem with one of the drives in the RAID?

It's running with just 1 drive, no mirror. That by itself shouldn't cause such a hangup. Since kernel messages aren't being displayed yet, it's really hard to see if something else is going on. You might need to boot from separate media and fsck the filesystem from there. At least you would then be able to see if there were any hardware errors occurring.
