It depends,

Is your Organization willing to purchase support?

or

you need a free Distro?

I personally feel Ubuntu 12.04 LTS could be a better version for running mail server.

I think almost any Linux distribution would be fine. An advantage of Ubuntu is that it is very popular, so others have already run into almost any issue you might hit and posted questions and answers online. If you know how to look for answers with Google, the questions you will want to ask about Ubuntu have already been answered.

I'm less clear about what that means (partially due to my lack of knowledge regarding PHP).

For many server set ups, Centos has solid advantages over other choices of distribution.

For example, the servers here support multiple users logging in simultaneously via X, VNC or SSH. The servers are in another room and had keyboard, mouse and display connected only when Centos was being installed. They have no keyboard, mouse or display during ordinary use. Any Linux distribution can be configured to handle all that, but configuring that kind of server is a lot easier with Centos.

Centos will be fine, but you should bookmark this page for the SysAdmin manuals http://www.linuxtopia.org/online_boo...ion_index.html
Note that Centos is a free rebuild of RHEL, so as long as you stick to eg RHEL6.x, it doesn't matter if the manual says for RHEL or Centos (apart from the Redhat Network registration bit).
Latest version is 6.3.
