What is the Ubuntu Alternate CD?
 
I want to know if this is simply Ubuntu without a GUI or cut down like Minimal Desktop for Ubuntu:

The Alternate installer details reads:

The alternate install cd installs the entire Ubuntu distro including GUI: but the installation itself is text-based. Sometimes the computer being installed doesn't have enough memory etc to use the GUI based install tool.

To add to SrDorothy's answer: The Alternate CD is also the one you have to use if you want to make a network based installation (PXE boot) or if you want to modify the type of installation itself (preseeding).
But normally you use it when the computer you want to install on either doesn't have enough RAM for the installer to work or has issues with the graphical system while installing.

The server version is usually the choice for command line no-gui.

One could delete or remove any packages after install too.
