APIs are access points to hook into the linux OS modules. Every operating System comes with some common built in modules for example reading a file, reading from keyboard etc and APIs allows you to access such modules from your programs.

It is not only operating systems that provide APIs. All programming languages do. APIs are essentially an interface to the various functions that a language or program can provide for you; it tells you what it can do and how you need to address it to tap into all that functionality.
