Ubuntu Server/Desktop

As you all would probobly know ubuntu server by default is just a shell prompt> i have installed Gnome Desktop Off Ubuntu Desktop Edition (Copied the packages and installed them) Now;
I am probobly switching to CentOS Servers anyway (Thats what i run on this comp) But i am wondering if i can have Ubuntu Boot As A Shell Prompt And Then Run The Gnome GUI When I Run A Certain Command?
Is This Possible?

When I had to do something like this, I just installed Ubuntu (kubuntu/ubuntu, actually) and used synaptic to replace the kernel with the server kernel.

Now, up to a point, this worked. Unfortunately, every time a kernel upgrade came along it found a new way of screwing up and needed manually sorting out, which it shouldn't really do, and that game got old, eventually.
