Unhappy The most common ways to record screen & audio? It isn't YxuTube

MP4 or MKV is fine

VLC appears to be only able to record the screen

I can't say whether it's the most common way, but a quick internet search brought up https://obsproject.com/.

I remember trying to record video from local news sites but the capture had trouble getting sound, some media stations have a sort of protection againts screen capture devices. I would really like to find the right tool. Sound similar ?

If you mean online videos then this maybe. I think I used youtube-dl to grab some guitar training.

Either OBS Studio or SimpleScreenRecorder are the most common screen recorders and are both generally available in the repos of most of the major distros. If you just want to download something playing on your browser, firefox has a variety of plugins that will do that like Video DownloadHelper. Some websites, particularly sports websites, stream video in a way that makes it difficult to impossible to download using a browser plugin but you can always record the screen with OBS or SimpleScreenRecorder.
