In alsamixer you can press "M" to mute/unmute. Left and Right arrow keys to switch between outputs. Up and Down arrows to change the levels. If you're wanting to use HDMI audio, that may not be as cut and dry. Check for a sound application to give you a nice gui and to keep things simple. Otherwise I know quite a few CLI ways to get it working. Assuming functional device and driver.

Most old CLI things have an F1 help screen. With boss key (ESC) to get back to normalcy. Or a man page or --help output.
