ls -a /dev/dsp returns
/dev/dsp

the returned text is in a blue-green color

I did what that page says. Still no sound from line-in. Maybe I should uninstall and re-install ALSA? If I uninstall from the package manager, does that completely uninstall? Or are there other steps?

The fact you don't find anything on your dropdown meny is probably caused by the fact that another app is using it, so it doesn't show up.
esd, arttsd, evolution-sound-server, any other running sound apps are all candidates that can cause this. Try shutting them all down and opening audacity again.
