setting up debian linux as a server
 
Can anyone tell me which of the following debian linux has and where to find them if it does.

DHCP (Dynamic Host Configuration Protocol)
File and Printer sharing
Web services (intranet)
internet sharing (proxy with Network Address Translation)
Email server
firewall capable
backup & restore utility

really need help. if you can even point me in the right direction it would be greatly appreceated.

Not sure why you couldn't find it but Debian has everything that you have posted here. Have you checked out the debian documentation?

All debian software can be installed using apt-get.
