is there a software or a linux live cd distributor
that i can Easily lock all my ports except those i need for specific internet sites ?

Mint isn't a great choice in my opinion. It might be possible to remaster it to include selinux and iptables and maybe clam or other tools.

Anytime a distro has any extra app, you run a security risk. Most live distro's default to a root user or higher level user.

Of course anytime you consider a high security distro made my anyone, there also exists a chance to have back doors.

I'd build my own that has exactly the most minimum needed to do the task. Maybe even consider one of the BSD's. Not sure I'd even force the live part. A real install could be updated daily.
