Some applications do not have a full screen option. Maybe if you tell us what the application is, anyone who has used it can help.
And just in case you aren't aware of it, Fedora 15 is obsolete. The newest one is Fedora 18. I would suggest that you reinstall at the earliest because you would not be getting any updates for 15.

I don't use VMware so I don't know for certain if you have this feature, but in fedora 18, I use the KVM virtualization and it has two different options for me. I need to choose both resize to vm and full screen to get the full screen option.
Even here, I don't get completely full screen. There's a black border on the sides for a couple of inches. Since I don't use virtualization all that much and only use it to test new releases, I don't bother trying to change resolution. I therefore don't know if changing the resolution within the client will help, but it's worth a shot. I'm sorry I can't be of any more help to you.
Lastly I will suggest that you give fedora 18 a try. It's really good and comes with the native KVM virtualization that is pretty good, even when compared to virtual box (I've tried that).
