probably it is against the original concept. I would rather use another pendrive to store personal data.

Search for "live with persistence".
As I understand it, by default, a live instance does not, by default, save changes. One can build and configure a live instance with persistence that will allow saving changes, but I don't know how to do that.

I don't believe it's a distribution issue, but how the live USB is built.

Welcome to LQ!

A 'live' system on a usb is read-only so as suggested above, what you need is a pesistent usb or a full install. If you don't want a full install just do an online search for 'create usb with persistence on OS', substitute the name of the Linux OS you are using. Many of the most common Linux systems allow this.

additionally - if the usb was big enough - you can have a data partition next to the live system - to store your data.

AntiX & MX Linux are amongst some of the distros that will let you create a persistent USB pendrive, take a look at their documentation.

(I think Mint & Ubuntu could do it too.)

Ubuntu and Mint persistence is very well documented and pretty much any major derivative of Ubuntu uses the same process. Pretty simple and many sites including official Ubuntu documentation explaining it. If using Ubuntu (or major derivative), the simplest way to do persistence is with mkusb explained at the link below. If using some other OS, you need to indicate what it is.

MX Linux has everithing built in for that:
Install
Create "snapshot" (with MX Snapshot) = ISO, with or without existing users
Write snapshot to USB (with MX Live USB Maker)
Boot and follow the instuctions for persistence, with the "cheatcodes"

MX Linux is pure Debian (10, Buster) with some extra repositories (former Antix and Mepis) to ease life.
Stable as a rock and very good driver support (especially for NVIDIA)
