There is no 'best' way...you can use either command. To figure out what's best for you, you need to RUN those commands, and look at the results, and weigh them against what you're actually trying to accomplish with the data after you export it.

If I want to full dump everything ( data , schema ) from openldap , would advise what command to do that ?

First, you deleted your original post here, which isn't good. Secondly, you were ALREADY TOLD that you could use either command. Further, if you bothered to put "linux export ldap data" into Google, the VERY FIRST HIT is from the OpenLDAP site:

Not sure how much more 'advising' you need, especially since you double-posted this same question:
