Smile not exactly sure where this goes- but need advanced project guides

Hi I have just started at ITT tech though I am sort of intermediate/advanced with linux so I was speaking with the dean of the CNS program and he recognizes me to be an advanced user with Windows/linux(that made my day to recieve that recognition). He told me I had an option of starting a club for various linux and network architecture experimentation projects.

So I am trying to find some sort of d-i-y project guides to get the ball rolling in various topics.

setting up apache servers
LFS and livecd creation
Streaming Media server
Advanced network architypes- neural, beowulf etc.(not the basic mesh, star, ring shit)
respinning fedora, ubuntu, gentoo, various distros
render farm
router hacking
and other various projects that you could suggest

I am open to anything and everything and anything that could point me towards a loose leaf curriculum.
