You need to highlight /dev/nvme0n1p1 and click "Edit", in the window that pops up:
Contenido = Conservar
Punto de Montaje = /boot/efi
Then you go back to the partition list and highlight the swap partition:
Contenido = Formato
Punto de Montaje = Swap
Then you highlight the partition you want as root:
Contenido = Formato
Punto de Montaje = /
If you want to seperate other parts into thier own partition, keep doing same for every partition you want Debian to use. ONce you have all require partitions configured, select Done or whatever and it will show you what it will do and ask for confirmation before moving on.

For the EFI system partition, /boot/efi should be the mount point.
In the captures you posted, the only partition you have defined (For Debian to use) is /boot on a 30+ GB partition, /boot only needs 1 GB max. You need to define the important partitions, EFI system and root. Anything else you want in it's own partition must also be defined.
Am I wrong in assuming the disk was pre-partitioned and pre-formatted before running the installer?
Because if the partitions were created during the install process, these settings would have been part of the custom partition creation stage.
