Need help with teaching elderly how to operate in Linux

I teach a computer literacy class for the elderly in my local community center.I really want them on Linux for security issues. But I find that my elderly students in the age group from 70 to 92 have eye hand coordination problems. Double clicking is an impossible task. I have therefor been putting them on windows 2000 with Single click enabled. There is no way I would never put the elderly on XP or Vista. Is a Single click ( Hover for select and single click for execute available in Ubuntu). If not you need to address this if you wish to be the open source system for the masses. The elderly are the largest growing segment of the computer market and they need to be served.
