Err, well yes that's a problem. I'll have to repeat, more or less, what markush said; Gentoo does not aim to be a newbie-friendly distro (actually, more or less the exact opposite), and there are, from that point of view, better options. OTOH, you may have access to a local Gentoo initiate, you have Gentoo already installed, and some of the Gentoo documentation is pretty good, so I am not quite sure what advice is appropriate.

OK, yes there is a lot that you could potentially learn. My advice would be to try to cut down the amount that you are trying to learn at one go. What you really need to know is
- how to use the gui
- how to install and remove packages
There is a lot more that you could learn (how to install, networking, performance optimisation, security bash scripting, programming in any one of a number of languages etc, etc, some of which may always be optional) but if you just think about what you need right now, there will be less chance of being over-faced and just giving up.

There are two (maybe three) parts to this:
- Find out what software you want to install
- Install the software
- (Learn/Use it)
You will need to know about portage, the Gentoo system for package (software) installation

(probably, don't get more than about a third of the way down that page, on a first read) fortunately, as you can see from the web page, you can not only install software with portage, you can also search for 'any software that has pdf in its name', which is often a good clue as to what software that you want. See also the 'emerge --searchdesc pdf' example, for when the software doesn't have a strong clue in the name.
As far as the GUI is concerned, can you possibly say which GUI you are using, please?
