For Zimbra,
download the packages from Zimbras website for your distribution.
Read the install documentation,
prepare your system with the packages you need per the instructions
Install the zimbra packages you downloaded onto your Linux box..

Should take no more than 15 - 30 minutes to setup and configure Zimbra to a running state from start to finish.

Zimbra is really simple to get running.

A bit overkill if the server is for only one person though.

Why not Postfix

I prefere Postfix as Mailserver. A goot introduction about how it works and how to install it you can find at: http://www.gentoo.org/doc/en/virt-mail-howto.xml

It's not quite simple but possible.

Can't ask for better support than that.. .

Ohhh I see Debian Packages for download in the 5.0 RC 1 Beta section !!!!

I may have to switch my production server to Zimbra once that gets released.

(Ubuntu LTS wouldn't install on my HP Server, but it's ok. I prefer Debian anyway )
