Unhappy Mail Server Setup


I recently decided to bin windows and move on to linux. I have both Red Hat & SUSE and I would like to set up a mail server. Can someone pls advice which application can I use nd where can I get step by step instructions esp for a newbie like me.

The usual suspects are:

sendmail
postfix
qmail
courier
exim

google will tell you where their websites are
