You can use the standard mail functionality: http://www.gnu.org/software/mailman/index.html

You can use the standard messaging functionality: http://linux.about.com/library/cmd/blcmdl2_write.htm

I believe there are a lot of IM software packages in Synaptic. You could even go for IRC...

You can use Pidgin and setup accounts with Bonjuor protocol:

http://socialvpn.wordpress.com/docs/...bonjourpidgin/

Code:
sudo apt-get install pidgin
* it's not ubuntu specific

A heavier-duty solution could be OpenFire as well, it's a jabber implementation. Lots of clients work with it...but it could be more than you need depending on how many users.

I suggest you use their website for the files and installation instructions. You could use the Synaptic Package Manager to install it using the GUI. I don't know if it's in the list.
