I'm trying to create a server to control audio, video, lighting, security, etc. but I wan to be able to control/communicate with both android and apple devices
Does anyone know of any software would do this and also which version on Linux would be best to you on the server?

well generally you can use a web service to exchange XML requests through an HTTP interface, so there's no dependency on the platforms any of it run on at all. The version of linux is specifically irrelevant, although a decent capable server distro like CentOS would seem logical.
i would just use ssh and something like connectbot to send commands to the server from the fone. if you must have a fancy gui (short of android/ifone development) perhaps you can create a php web page to operate the commands as a front end.
